Anytime bacon, cream cheese and shredded colby jack get together, it’s a party. Speaking of parties, these cheesy bacon-stuffed mushrooms are my go-to for potlucks, picnics and work functions because they are super easy to make.
Prepping the Cheesy Bacon Stuffed Mushrooms:
The first thing you’ll want to do is wash your mushrooms and pat dry with a paper towel. Nobody likes soggy shrooms.
Next, remove the stems from the caps. This is easily done, but be gentle as to not crush the caps. Simple take the cap-side down in one hand and wiggle the stem back and forth with the other.
It’s super frustrating to wait for cream cheese to soften, so I place mine in the microwave for 30 seconds along with the bacon and shredded cheese. Give it a good mix and fill the caps of washed mushrooms and that’s it! Truly effortless baking and everybody loves em’!
Other ways to stuff mushrooms?
Instead of using bacon and cheddar cheese, you could use pepperoni and mozzarella for a pizza-stuffed mushroom recipe.
Alternatively, choose ham and Swiss with your cream cheese for a “chicken cordon bleu” stuffed shroom.
Seafood fan? Use some crab dip topped off with shredded parmesan in your mushrooms. The combinations are endless.
Taco Tuesday? Stuff them with your favorite ground beef/taco-seasoning and some cheddar on top!
Burger connoisseur? Mix up a little ground beef, pickle, ketchup with finely-chopped pickles. Top it off with your favorite burger cheese.
Love buffalo chicken? Plop in your favorite buffalo cheese dip recipe with shredded cheddar on top and voila! You have another easy low-carb snack.
The Ultimate Party Food
If you’re going to a party or potluck, these little guys can be popped into the fridge overnight and removed for cooking just before your gathering. I suggest setting them out a bit before to get them around room temperature just before baking.
Cheesy Bacon-stuffed Mushrooms (low-carb and keto friendly)
- 10 oz package baby bella mushrooms
- 2 tbsp real bacon bits
- 6 oz cream cheese
- 1/2 cup Colby or cheddar jack cheese, shredded
- Preheat oven to 350 degrees. Wash mushrooms and remove stems, leaving cap exposed.
- Heat cream cheese in microwave for 30 seconds to soften.
- Mix in bacon bits and Colby jack cheese. Use a spoon to fill mushroom caps. Top with a bit extra Colby jack cheese.
- Bake 20-25 minutes or until cheese is golden on top.
