Quick Chicken Taco Soup
A quick chicken taco soup that's low carb and only a few simple ingredients. A fiesta in your mouth, this soup is perfect for family gatherings.
- 2 large chicken breasts
- 8 oz cream cheese, softened
- 1 pack taco seasoning
- 1 tbsp garlic powder
- 1 tsp chili powder
- 8 oz can tomatoes and chilies
- 1/4 cup scallions, optional
First, boil chicken in 6 cups of water.
Next, remove chicken and shred, reserving the water.
Add shredded chicken back to pot along with all other ingredients. Stir occasionally on low until cream cheese is fully incorporated.
