Quick Cauliflower Potato Salad (Keto)

Delicious low carb and keto friendly "potato" salad, made southern style. An easy, no-fuss recipe full of flavor. This quick cauliflower potato salad goes great with BBQ and pork!

Ingredients

  • 3 hard boiled eggs
  • 1 red onion
  • 1 bag cauliflower rice, microwaved
  • 2 tbsp dill pickle relish
  • 2 tbsp mayonaise
  • 1 tbsp dijon mustard
  • 1 tbsp dried dill
  • 1 tbsp chopped fresh parsley (optional, garnish)

Instructions

  • Gather your ingredients and preheat oven to 350º F. Bake eggs in a muffin tin for 30 minutes to make "hard boiled" oven eggs. Meanwhile, microwave cauliflower rice per directions on bag.
  • Remove eggs after 30 minutes and allow to cool. Remove shells and chop.
  • In a large mixing bowl, combine all ingredients (except parsley garnish) and cool in the refrigerator for 30 minutes to an hour.
