Zucchini Pasta {with cherry tomatoes + feta}

This gorgeous low carb pasta is made with healthy zucchini spirals, garlic, onion, feta cheese and cherry tomatoes.

Ingredients

  • 4 zucchini large
  • cups cherry tomatoes cut in half
  • 1 onion finely chopped
  • 4 garlic cloves minced
  • ½ cup feta cheese crumbled
  • ½ cup parsley finely chopped

Instructions

  • Use a spiralizer, or cut the zucchini into very thin strips.
  • Chop the onion and garlic finely.
  • In a large non-stick skillet, brown the onion and garlic for 3 minutes. 
  • Add zucchini and tomatoes and cook until the zucchini is tender, about 5 minutes. 
  • Sprinkle feta cheese and parsley, mix to combine everything. 
    Season with salt and pepper
