Zucchini Pasta {with cherry tomatoes + feta}
This gorgeous low carb pasta is made with healthy zucchini spirals, garlic, onion, feta cheese and cherry tomatoes.

- 4 zucchini large
- 1½ cups cherry tomatoes cut in half
- 1 onion finely chopped
- 4 garlic cloves minced
- ½ cup feta cheese crumbled
- ½ cup parsley finely chopped
Use a spiralizer, or cut the zucchini into very thin strips.
Chop the onion and garlic finely.
In a large non-stick skillet, brown the onion and garlic for 3 minutes.
Add zucchini and tomatoes and cook until the zucchini is tender, about 5 minutes.
Sprinkle feta cheese and parsley, mix to combine everything. Season with salt and pepper
