20-Minute Egg Roll in a Bowl with Spicy Chili Sauce
Keto-friendly pork egg roll in a bowl with sweet & spicy chili-soy sauce. Easy weeknight dinner recipes, ready in 20 minutes and in one pan!
- 1 lb pork
- 1 pkg coleslaw mix
- 1 tbsp sesame oil
- 1 tbsp ground ginger
- 4 tbsp soy sauce
- 2 tbsp Asian chili garlic sauce
- 1/3 cup sliced scallions
- 2 tsp sesame seeds, for garnish
- 1/2 jalapeno pepper, optional
Heat oil on med-high heat in wok or large pot. Add pork and season with a pinch of salt and pepper.
After 5 minutes, add entire bag of coleslaw mix and jalapeño, if desired. Add ginger and 2 tbsp soy sauce. Stir occasionally. Once served, top with scallions, sweet & spicy sauce (see below) and sesame seeds.
Cook for 15-20 minutes, until pork and cabbage cooked through.
Sweet & Spicy Sauce Recipe
While stir-fry is cooking, combine 6 tbsp erythritol, 6 tbsp soy sauce and 3 Tbsp chili garlic paste in small pot on med heat, stirring frequently until incorporated. Pour desired amount over egg roll in a bowl and serve.
