Air Fryer Parmesan Zucchini Chips {with dip!}

- 1 zucchini large
- 3 eggs
- ½ cup parmesan cheese grated
- ½ cup almond flour optional, see recipe notes
- ¼ tsp salt and pepper to taste
Sauce Recipe
- 1 tsp mayo
- ¼ cup sour cream
- ½ tsp cajun seasoning or chili powder
- 1 tsp cilantro or parsley optional
Spray air fryer with non-stick cooking spray.
Whisk eggs in a medium bowl. Set aside.
Add parmesan cheese and/or almond flour to another bowl.
Slice zucchini in thin slices using a mandoline or knife. Pat dry with a paper towel.
Add slices of zucchini to egg batter, then parmesan crust mixture, then air fryer. Repeat.
Air fry at 350°F for 10 minutes, checking halfway.
Recommendations:
- use a mandoline to get perfect slices
- non-stick spray is optional, but preferred for crispiness
- almond flour is optional - you may use only parmesan cheese or parmesan cheese with pork rinds tend to work well
- jazz it up with optional seasonings, such as cajun spices or chili powder
