Chocolate Avocado Truffles

These chocolate avocado truffles are a yummy sweet treat! They're healthy, keto friendly and are perfect for a healthy, protein-rich snack.

Ingredients

  • 3.5 oz dark chocolate * or Lily's brand sugar free chocolate
  • 1 cup mashed avocado 2 small or 1 large ripened avocado
  • ½ tsp vanilla extract
  • 3 tbsp cocoa powder
  • 3 tbsp powdered monk fruit sweetener

Instructions

  • Start by mashing the avocado until smooth. You can use a fork or a a hand blender for an smoother texture.
  • Add melted chocolate to the mashed avocado and mix until combined.
  • Add powdered monkfruit and vanilla extract and combine. Then add the cacao powder and stir to combine. Using 3 tbsp of cacao powder will make some moist and soft truffles, if you’d like denser and harder truffles, you can add an extra tbsp (I’d advise you to add it after the chilling process when you’ll see exactly how the texture is).
  • Let the batter chill in the fridge for 30 minutes, to harden. Then, use your hands to roll 15-18 truffles. You can coat them with cacao powder, shredded coconut or melted chocolate.

Notes

Tips
  • The type of dark chocolate you choose will impact on the final flavor. I’ve used a 75% Lint chocolate and the result was delicious but not super sweet. If you more on the sweet side of things, you could use a sugar-free chocolate like Lint 50% sugar-free version.
  • Truffles will keep in an airtight container in the fridge for 3 to 5 days.
Recipe Notes
These are healthy extra-chocolate-y truffles. Texture-wsie they are creamy and smooth with a strong chocolate flavour, you don't even notice that they're made out of avocado.
