Creamy Tuscan Chicken & Zucchini

A creamy, indulgent Tuscan chicken and zucchini bake. Made with parmesan cheese and sun-dried tomatoes. A low carb and keto friendly dinner.

Ingredients

  • 4 chicken breasts
  • 2 tsp butter
  • 1 small jar of sun dried tomatoes
  • 1 large zucchini
  • 1 cup heavy cream
  • 2 tbsp onion powder
  • 1 tsp salt and pepper, to taste
  • 1/2 cup Pecorino Romano cheese or parmesan cheese

Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • Bake chicken in covered dish. Remove after about 20-25 minutes and add chopped zucchini, cream, sun-dried tomatoes and spices.
  • Sprinkle cheese on top and bake additional 5-8 minutes.
