Creamy Tuscan Chicken & Zucchini
A creamy, indulgent Tuscan chicken and zucchini bake. Made with parmesan cheese and sun-dried tomatoes. A low carb and keto friendly dinner.
- 4 chicken breasts
- 2 tsp butter
- 1 small jar of sun dried tomatoes
- 1 large zucchini
- 1 cup heavy cream
- 2 tbsp onion powder
- 1 tsp salt and pepper, to taste
- 1/2 cup Pecorino Romano cheese or parmesan cheese
Preheat oven to 375 degrees Fahrenheit.
Bake chicken in covered dish. Remove after about 20-25 minutes and add chopped zucchini, cream, sun-dried tomatoes and spices.
Sprinkle cheese on top and bake additional 5-8 minutes.
