Southern Keto Shrimp & Grits
A South Carolina- Inspired shrimp and "grits" recipe, keto style. Shrimp smothered with bacon, green pepper and onion and paired with cheesy cheddar and garlic cauliflower rice.
Servings: 4 people
- 5 slices of bacon chopped
- 1 green bell pepper
- 1 onion
- 1 tbsp Old Bay Seasoning
- 1 lb shrimp uncooked, peeled and deveined
Cauliflower "Grits" Ingredients
- 4 cups cauliflower riced or mashed
- 2 tbsp butter
- 4 tbsp minced garlic
- 1 cup cheddar cheese shredded
- 1 tsp salt and pepper optional
Fry bacon, remove from pan and chop. Reserve bacon grease.
Cook pepper and onion in bacon grease. Add back in shrimp, bacon and Old Bay seasoning until shrimp is pink.
Cauliflower "Grits" Instructions
On low-medium heat, cook 1½ packs of cauliflower rice (or 4 cups) in large saucepan with water. Drain water.
Add in other ingredients and cook until incorporated.
Pulse in food processor, if desired.
