Spinach Mushroom Quesadilla

Ingredients

  • 1 low carb tortilla
  • 1 cup spinach fresh, canned or thawed
  • 1 cup mushrooms chopped
  • 1 tbsp olive oil
  • 1 tbsp salt and pepper
  • 1 chopped garilic clove optional
  • ¼ cup Italian cheese blend (or Mexican cheese blend)

Instructions

  • Preheat oven to 400° F.
  • On med-high heat, add a little olive oil to a skillet. Heat tortilla until slightly crisp on each side, flipping after about a minute.

  • Add a bit more olive oil to pan. Add in mushrooms and spinach and cook until slightly dark and spinach has cooked.

  • Remove and add to tortilla. Top with cheese. Bake until golden (about 7 minutes).
