Spinach Mushroom Quesadilla

- 1 low carb tortilla
- 1 cup spinach fresh, canned or thawed
- 1 cup mushrooms chopped
- 1 tbsp olive oil
- 1 tbsp salt and pepper
- 1 chopped garilic clove optional
- ¼ cup Italian cheese blend (or Mexican cheese blend)
Preheat oven to 400° F.
On med-high heat, add a little olive oil to a skillet. Heat tortilla until slightly crisp on each side, flipping after about a minute.
Add a bit more olive oil to pan. Add in mushrooms and spinach and cook until slightly dark and spinach has cooked.
Remove and add to tortilla. Top with cheese. Bake until golden (about 7 minutes).
