Spinach Mushroom Quesadilla

A delicious low-carb appetizer or mid-day snack.

Healthy delicousness.

Cheesy.

Crunch on the outside, yum on the inside.

Cooking spinach and mushrooms.

To cook spinach with mushrooms, I first at a little bit of olive oil in my Skillet. Next, you’ll want to add in your spinach and mushrooms and let both of those cook down with some fresh grated garlic (or some garlic powder if you’re in a pinch).

Dipping quesadilla in pizza sauce.

On med-high heat, add a little olive oil to a skillet. Heat tortilla until slightly crisp on each side, flipping after about a minute.

Add a bit more olive oil to pan. Add in mushrooms and spinach and cook until slightly dark and spinach has cooked.

Remove and add to tortilla. Top with cheese. Bake
