If you're schedule is anything like mine, you're all about easy weeknight dinner ideas.
And, if you're meal prepping, you could easily make this dish on a Sunday for the week ahead, like I do.

What other ingredients could I use for the stew?
Roasted radishes make a great alternative to the traditional potatoes in beef stew.
If you're close to finishing, you may want to add in some cauliflower or broccoli as it doesn't take very long to soften up in an already warm slow-cooker.
What can I serve with beef stew?
I like serving my beef stew over some mashed califlower with garlic and butter in the mix.
You may even want to toast some low-carb bread and serve the stew on top, like an open-faced beef sandwich.
Easy Keto Beef Stew
- Cover both sides of beef with ½ each of dry seasonings.
- Add veggies, making sure they are covered in beef broth.
- Cook on low in a slow cooker for 4-6 hours.
