Ingredients

For this recipe, you’ll need the following ingredients.

  • 2 medium zucchini, spiraled
  • shrimp, uncooked, deveined & tail removed
  • tomato paste
  • cream cheese
  • butter
  • half and half
  • thyme
  • garlic powder
  • oregano
  • parsley flakes
  • onion powder
  • tumeric
  • red pepper flakes
  • shredded parmesan cheese (or Pecorino Romano)

Instructions

  1. wash zucchini and wipe with a damp paper towel

2. spiralize zucchini using a spiralizer. Pat dry any moisture on the zucchini.

3. Cook butter, spices, or sauce, then add in shrimp.

4. Add some feta cheese, shredded parmesan or pecorino Romano cheese atop my zoodles.

FAQ

Is this dish spicy?

The sauce can be a tad spicy. If you prefer a milder dish, omit the red pepper flakes.

What to serve with zoodles and shrimp?

A Greek salad is a delicious addition to this shrimp dish.

How to keep my cream sauce thick?

Remove any excess moisture from the shrimp and zucchini noodles prior to adding them in sauce. Remove excess moisture with a dry paper towl.

Substitutions

Ingredients

  • 2 medium zucchini, spiraled
  • 1 lb shrimp, uncooked, deveined & tail removed
  • 1.5 tbsp tomato paste
  • 4 oz cream cheese
  • 2 tbsp butter
  • 1/2 cup half and half
  • 2 tbsp thyme
  • 2 tbsp garlic powder
  • 2 tbsp oregano
  • 1 tbsp parsley flakes
  • 1 tbsp onion powder
  • 1 tsp tumeric
  • 1 tbsp red pepper flakes
  • 1/2 cup shredded parmesan cheese

Instructions

  • Preheat oven to 400º F. Butter a cast iron skillet and add zoodles and shrimp.
  • In small saucepan, mix spices, cream cheese, butter, and half & half on low-med heat. Stir frequently.
  • Bake zoodles and shrimp for 5-8 minutes. Remove and add sauce to shrimp and zoodles. Stir, add parmesan and bake for another 10 minutes. Serve.

    Wow! Great favor and beautiful dish!! Served pan fried tortillas, lightly butter, with it and a tomato and cucumber salad. Perfect impressive lunch!

    Cut all spices in half. Used 3 zucchini spiraled. Added more whipping cream, butter, and chicken broth to thin
    sauce, as well as 6 Oz. Cream cheese, 3 T. Tomato paste. 1 1/2 lb. shrimp. Everyone loved the dish!!!!
