I was snacking on air fryer calamari when I started thinking about using the same breading for other recipes. Then it hit me, I could totally make zucchini in the air fryer with shaved parmesan cheese (and optional almond flour).

High in fiber and low in calories, zucchini is easily the most underrated keto friendly veggie out there.
And, there’s only 3g. net carbs in one whole medium zucchini squash.
Best Ingredients for Zucchini Chips
You can make this healthy recipe a few different ways:
- zucchini + egg + parmesan shavings, or
- zucchini + egg + (parmesan + almond flour blend)
- zucchini + egg + (parmesan with your favorite seasonings)
The difference between the two depends on how crispy or thick you like your breading to be. I recommend using almond flour if you prefer a thicker breading (as shown here).

In addition to the egg and parmesan mixture, I like to add in extra seasonings depending on my meal and mood.
Some of the best seasonings for veggies in the air fryer include:
- Italian seasoning
- cajun seasoning
- adobo seasoning (garlic, lemon, cumin, oregano, turmeric)

- Swipe out zucchini for summer squash, carrots, or sweet potato- just be sure to check that the carbs are within your daily goals.
- Substitute the zucchini in this recipe for bell peppers or sweet peppers.
- Try dried parmesan cheese instead of fresh grated parmesan if that’s all you have on hand.

Non-stick spray: yay or nay?
While you don’t necessarily need non-stick spray, I tend to use it to help crisp up the almond flour-parmesan coating.
You may also brush the air fryer rack with olive oil or omit it altogether.
How to make air fryer zucchini chips extra crispy
Follow these tips if you prefer a crispier zucchini chip:
- slice zucchini using the thin setting on your mandoline
- pat with a paper towel after slicing
- flip halfway through the cook time, making sure to not overcook
Air Fryer Parmesan Zucchini Chips {with dip!}
Equipment
- mandoline
Ingredients
- 1 zucchini large
- 3 eggs
- ½ cup parmesan cheese grated
- ½ cup almond flour optional, see recipe notes
- ¼ tsp salt and pepper to taste
Sauce Recipe
- 1 tsp mayo
- ¼ cup sour cream
- ½ tsp cajun seasoning or chili powder
- 1 tsp cilantro or parsley optional
Instructions
- Spray air fryer with non-stick cooking spray.
- Whisk eggs in a medium bowl. Set aside.
- Add parmesan cheese and/or almond flour to another bowl.
- Slice zucchini in thin slices using a mandoline or knife. Pat dry with a paper towel.
- Add slices of zucchini to egg batter, then parmesan crust mixture, then air fryer. Repeat.
- Air fry at 350°F for 10 minutes, checking halfway.
Notes
- use a mandoline to get perfect slices
- non-stick spray is optional, but preferred for crispiness
- almond flour is optional – you may use only parmesan cheese or parmesan cheese with pork rinds tend to work well
- jazz it up with optional seasonings, such as cajun spices or chili powder
