Buttery loaded radishes: the best substitute for loaded potatoes
Are you on a keto or low carb diet? With keto buttery loaded radishes, you can curb those potato cravings while enjoying the bacon and cheesy goodness too. They’re also great for a gluten-free or low carb diet.
Missing your old friend, Mr. Potato?
I sure do, but with roasted radishes I have found my perfect alternative and I don’t even miss potatoes anymore.
How are radishes similar to potatoes?
Both are root vegetables, grow underground, and taste amazing.
Let’s compare, shall we?
Both radishes and potatoes have similar amounts of calcium, Vitamin C and iron.
Potatoes, on the other hand, have a much higher carb count. Per serving, potatoes pack a punch at about 15 g. of carbs. That’s almost a full day’s worth if your on the ketogenic diet.
Radishes, however, are much lower in carb count per serving. One serving of radishes have only 2 g net carbs!
How do I make keto buttery loaded radishes?
Tip: Use a cast-iron skillet or oven-safe skillet to easily transfer radishes from frying to roasting.
First, I fry my sliced radishes in a few tablespoons of butter, just like I would fry potatoes. It takes a bit of time for them to soften, but I find the radishes really soak up all the buttery goodness just like potatoes would with this method.
Next, I add my cheese of choice, bacon bits or any other toppings to the mix and bake on 420º F for approximately 5-10 minutes, or until the cheese is melted.
What can I serve low-carb loaded radishes with?
I like mine with yogurt-based ranch dressing (low-carb) or sour cream. You may also want to try radishes with:
- pulled pork
- green onions
- Sriracha or hot sauce
