Ever had one of those busy days? I think we all have. This recipe is easy and makes for an effortless weeknight meal. You’ll only need a few ingredients for this one-pan casserole. Of course, these sun-dried tomatoes are no joke and pack a flavorful addition to your chicken!
How to Make Low-Carb creamy Tuscan Chicken with Sun-dried Tomatoes
To begin, bake your chicken breasts in a covered dish with the butter, salt and pepper.
Next, add in the heavy cream, chopped zucchini, onion powder and sun dried tomatoes about half way through.
You’ll want to make sure the chicken is cooked well enough before the final touch. Finally, sprinkle on some magic with parmesan cheese just before removing from the oven.
How to make Tuscan chicken with garlic or spinach
If you like a bit more flavor, add in some fresh garlic cloves to this creamy, cheesy Tuscan chicken bake.
Love spinach? Instead of zucchini, try pan-searing your chicken, then frying on low. Simply add in a cup or two of fresh spinach to the mix, while the chicken finishes. That’s what I call an easy one-pan dinner winner!
Sides for Tuscan chicken casserole
Since casseroles are already a one-dish dinner, I typically serve a salad for a starter. A nice Greek salad with onion, olives, green peppers and tomatoes.
Creamy Tuscan Chicken & Zucchini
Ingredients
- 4 chicken breasts
- 2 tsp butter
- 1 small jar of sun dried tomatoes
- 1 large zucchini
- 1 cup heavy cream
- 2 tbsp onion powder
- 1 tsp salt and pepper, to taste
- 1/2 cup Pecorino Romano cheese or parmesan cheese
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Bake chicken in covered dish. Remove after about 20-25 minutes and add chopped zucchini, cream, sun-dried tomatoes and spices.
- Sprinkle cheese on top and bake additional 5-8 minutes.
