- 2 tbsp dijon mustard

- 2 cups monterrey jack or pepper jack cheese
Instructions
- Preheat oven to 350º F. Remove stems from mushrooms and set aside.
- Brown ground beef on med heat. Add all other ingredients, including mushrooms. Stir occasionally. Drain thoroughly.
- Spray baking dish with non-stick spray. Add ground beef mixture.
- Layer Monterey Jack cheese on casserole and bake for 15 minutes or until cheese is golden.

I’m sorry there was a lot of liquid left. Ground beef can be tricky in the oven. Maybe add a tsp of xanthan gum and stir a bit before adding cheese and baking.

Delicious! Just a note, though. While this recipe is absolutely low-carb, it’s definitely not keto–way more protein than fat (keto-ers have to be careful about ingesting too much protein, our body converts excess protein into glucose). To make this truly keto, it needs more fat–maybe in the form of a few pats of butter on top, and a nice oily salad on the side? That’s what I’m doing at least 😀 Thanks for the yummy recipe!

Really enjoyed this recipe, and my husband said it was a new favorite! Really liked the mushrooms in the casserole. I added a bit more tomato sauce (Used Rao’s as has no added sugar and “fake” ingredients.”) I fully drained the ground beef before adding the veggies; took the beef out of the pan and then put beef back in pan and added rest of ingredients. I didn’t find it too “liquidy” this way. Was even better the next day as leftovers!

This was a big fail for us. There was way too much fat and since the recipe doesn’t say to drain, I didn’t. After I put the rest of the ingredients in, I couldn’t drain it. There are 8 of us and no one ate it. There was absolutely no flavor, and yes, I double checked to make sure I put everything in. I usually love your recipes but this one failed miserably.
