It’s really simple and ridiculously delicious.

First, you’ll want to butter or oil your pan and grill the chicken breasts until they’re golden.

How to cook your chicken breasts before adding in mushrooms:

Next, remove the chicken and set aside. Add your butter to the pan and caramelize the onions and mushrooms with garlic. Add in your half & half and softened cream cheese, stirring until incorporated. Plop in the chicken and you’re good to go. It’s really that simple.

Which mushrooms should I use with chicken?

I prefer baby portobello mushrooms for many of the dishes I make, but feel free to use your own preference for your homemade mushroom cream sauce.

Just be sure to not over-cook your mushrooms- it doesn’t take long for them to soften up.

Ingredients

  • 4 tbsp butter
  • 3 chicken breasts
  • 4 cloves garlic
  • 8 oz baby bella mushrooms
  • 2 oz cream cheese
  • 1/2 cup half and half
  • 1 tbsp parsley, optional garnish
  • 1 yellow onion

Instructions

  • On med-high heat, melt 2 Tbsp. butter in pan. Add chicken breasts (cut into thirds).
  • Cook chicken until golden and remove.
  • Add 2 Tbsp. butter to pan with garlic, mushrooms, and onion. Cook until caramelized.
  • Add in softened cream cheese and half & half. Stir occasionally, then add in chicken.
