Next, remove the chicken and set aside. Add your butter to the pan and caramelize the onions and mushrooms with garlic. Add in your half & half and softened cream cheese, stirring until incorporated. Plop in the chicken and you're good to go. It's really that simple.
Which mushrooms should I use with chicken?
I prefer baby portobello mushrooms for many of the dishes I make, but feel free to use your own preference for your homemade mushroom cream sauce.
Just be sure to not over-cook your mushrooms- it doesn't take long for them to soften up.

One-pan Creamy Garlic Chicken & Mushrooms
- 4 tbsp butter
- 3 chicken breasts
- 4 cloves garlic
- 8 oz baby bella mushrooms
- 2 oz cream cheese
- ½ cup half and half
- 1 tbsp parsley, optional garnish
- 1 yellow onion
- On med-high heat, melt 2 Tbsp. butter in pan. Add chicken breasts (cut into thirds).
- Cook chicken until golden and remove.
- Add 2 Tbsp. butter to pan with garlic, mushrooms, and onion. Cook until caramelized.
- Add in softened cream cheese and half & half. Stir occasionally, then add in chicken.
